Follette Pottery Cookbook Countdown #5 Gumbo This time of year, there's just not anything better than sitting down with a good bowl of Gumbo. Kent's version is easy and mouth watering. You'll feel like your down in delta with some chef named Boudreaux.1 Cup butter 1 Cup flour 1 lb. sausage (Andouille is best) sliced 6 chicken breasts, boned and cubed 2 lbs. peeled shrimp 1/2 lb. tasso (Cajun Smoked seasoned Ham) 2 Cups chopped onions 1 Cup chopped celery 1 Cup chopped bell pepper 2 Tablespoons minced parsley 2 tablespoons minced garlic 4 cups sliced okra 1 can whole kernel corn 1 gallon water 1 tablespoon salt 1 teaspoon pepper 1 dash cayenne 3 bay leaves 1 28-ounce can diced tomatoes 1/4 cup cooking oil 1. First, go out in the front yard and catch a chicken. 2. Invite her in for dinner. 3. While your helper gets the chicken ready for the pot, make a roux. See roux directions below. 4. In a 8-quart pot, add sausage, ham, chicken breasts, onions, celery, bell pepper, parsley and garlic to 1/4 cup cooking oil. 5. Saute until onions are clear. 6. Add water, tomatoes and the roux and seasonings. 7. Raise heat and bring to a boil. 8. Simmer for 30 minutes, or until chicken is tender. 9. Fifteen minute before serving, add shrimp, okra, and corn. 10. Serve over rice with garlic bread and "sweetea." How to Make a Roux 1 cup flour 1 cup butter Old Fashioned Roux: 1. In an 8-quart black iron pot, gradually add flour to melted butter stirring continuously with a wooden spoon over low heat until it reaches a warm dark brown color. Warning! If you burn it, start over. Microwave Roux: 1. In a 4-cup glass measuring cup, add 1 cup flour and 1/2 cup butter. 2. Microwave on high 1 minute. 3. Stir the roux. 4. Microwave 1 minute. 5. Stir the roux. 6. As the roux starts to darken, microwave on high for 30 second intervals, and make sure to stir the roux. 7. Continue doing this in 15 second intervals until the roux is about the color of a dark gravy. 8. DON'T BURN THE ROUX! Store-bought Roux: 1. Go to the store and while no one is looking purchase the already prepared roux in the "Cajun Food" section. 2. Discreetly pay for it, go home, use it. Invite the neighbors in for your "home-made" roux and lie, lie, lie. |
